Baties for Dal Bati Churma

Baties For Dal Bati Churma:-
Preparation Time:-10 minutes
Baking time:- 35 to 40 mniutes
Serves:-8 to 10 Bati/Serves 4 to 6


The Incredible India is surrounded by a wide range of regional cuisines, most of them are cooked according to the range of diversity in soil types. Like in Rajasthan "The Land Of King" as the kings used to go on wars needed long lasting foods and the food which could be eaten without heating.The food is prepared according to the available items  in the different areas of Rajasthan.So in the desert side of Rajasthan like Jaisalmer,Bikaner,and Barmer region the cooks prepares the type of cuisine which requires very little water and they prefer instead to use more milk, buttermilk and clarified butter.Perhaps the best Known Rajasthani food is Daal Baati which is also known as Dal Bafla in Indore and malwa region.The Rajasthani food is incomplete without the mention of the famed Dal Baati churma.The Dal is prepared using some spices and five combinations of Lentils named as Panch Mela Dal or simply by using Toor Dal(Split Pigeon Pea).The Baati is prepared with many variations and ways.I have used Wheat flour(Aata) and semolina.This is a very heavy diet as lots and lots of Ghee is used in this dish. This is a very favourite cusine in my home. So here is the recipe for Baati; For Dal recipe,please refer to my Panchmela Dal recipe.And for the Sweet churma ladoos refer to my Churma Ladoo recipe.
Ingredients:-
1)Wheat Flour(Aata) 4 cups
2)Semolina 1 cup
3)Salt 1/2 teaspoon
4)Baking Powder 1/2 teaspoon
5)Carom Seeds 1/4 teaspoon
6)Oil or butter 2 tablespoons(Butter should be at room premature)
7)green chilies crushed 1/4 teaspoon
8)Grated ginger 1/2 teaspoon
9)Grated garlic 1/2 teaspoon(optional)
10)Yogurt 1 cup
11)Warm Water 1/4 cup
12)Clarified butter or pure ghee 1 cup (To deep the Baati)
Directions:-
1)Preheat oven to 180°Celsius or 350°Fahrenheit.
2)Mix and sift together wheat flour,semolina,salt and baking powder.
3)Add in carom seeds and mix.Add in crushed green chilies.
4)Add in ginger and garlic grated,mix well.
5)Add in butter or oil, mix well.
6)Add in yogurt,mix well to form a stiff dough.Add the warm water if required, as some times if the yogurt is liquid,you need less water.And if the yogurt is thick then you may require all of the water and knead it for 1 to 2 minutes.
7)Apply 2 to 3 drops of oil or little bit butter to the dough,cover and allow it to rest for 15 minutes.
8)After 15 minutes,make golf-size rounds (Refer the pictures),keep it on a baking tray or pizza stone,bake for 15 to 20 minutes,keep an eye while baking,after 15 minutes turn over and bake on the other side for another 15 to 20 minutes or till the baties change the color to light pink.(Refer the pictures).
9)Heat the ghee until it melts,when the baaties are ready press them little bit and deep them into the ghee for 30 seconds,remove and keep aside.Yummy Baaties are ready.
How to serve:-
1)Take the baties in a deep plate, pour the Panchmela Dal
2) scrumble Churma ladoos ,top with 1 tea spoon of ghee and serve hot.

My Fifth Fondant Cake

Fashionista Cake(Make up kit,Hand bag and Shoe):-






This is one of the most wanted to try cake for me.And as usual looking for the occasion to give it a try,my friend's birthday was there and i decided to delight her with this cake.So i baked and decorated this makeup kit cake for my beautiful friend,this turned out pretty much good for the first trial.I have made Nail paint bottles out of fondant,Mac eye shadow and lipstick. The kit bag is a chocolate cake covered in fondant and the matching shoe is made out of fondant too.So here i am sharing some of the pics.

The cake,shoe nail paint bottle is ready,but still the eye shadow and lipstick needs to be on the spot.


Taddaa..,the cake is ready for the birthday girl to cut. Yeehhu i made it again. Feeling Happy:)

Second time i have made this CHANEL hand bag for my kids class teacher's birth day.The class representative asked about making the cake and i then i decided to make this beautiful gift for the beautiful lady.  She was very happy after seeing the cake. She liked it so much that she didn't cut the cake and took it home to show to all her family members. The best thing she said to me is that "Nobody has given me such a beautiful cake in my life before!" and that was so flattering ,i was more happier than her, i guess!...:) so its true if you make some one happy you will be happy. All other parents who were present there, named it as a Masterpiece.So here i am presenting the beautiful Chanel Handbag cake..

BACHELOR SPECIAL BURITTOS

MINI-BURRITOS:- 
Serves:- 5 
Making Time:-20 minutes

 Burritos is a type of hand held take out Mexican food. This one is really very easy to make and very feeling. I have used Old El Passo's products to make this as i am posting this specially for bachelors and working women. If you don't want to spend the money on ready made Old El Passo products and you don't want to use the tin products,then you can make these products at home using Rajma. I Will post the Home made recipe soon.This recipe is specially for my dear friends and followers who have requested to post it on my blog. So here is the recipe.
Ingredients:-
1)Mini Tortillas 1 pack
2)Re- fried beans paste 3 table spoons (I used Old Elpasso brand)
3)Mexe-Beans 2 to 3 table spoons (For filling  and rest for topping)
4)Cooked Rice 1 cup
5)Chopped lettuce 1 cup
6)Chopped Capsicum 1 cup
7)Avocado 1 number
8)Grated Mozzarella Cheese 1 cup
9)Nachos 1 cup
10)Salsa Sauce 1 bottle(I used Old elpasso salsa)
11)Sour cream 1 pack
Directions:-
1)Open the re-fried bean can and mexe-bean can,heat the contents in a pan or microwave in a microwave safe bowl separately.
2)Mix the hot cooked rice, the 3 tablespoons of hot re-fried beans paste and 2 to 3 tablespoons of Mexe-beans thoroughly.
3)Warm the tortillas according to packet instructions.
4)Keep all the ingredients handy.
5)Place the tortillas in a microwave safe dish,spread the rice and re-fried-beans mixture
8)Add in mexe-beans,cheese,1 tea spoon salsa,few capsicum slices.
9)Roll the tortilla gently.Top with the grated cheese and microwave for 30-40 seconds or till the cheese melts.(Refer the pictures)
10)Remove from the microwave and top with nachos,salsa,avocado,lettuce and sour cream(optional)
11)Serve Immediately.And enjoy the restaurant test of Mexican food right in your home comfort.

AAMTI(Indian Spicy Soup)

Aamti(Indian Spicy Soup):-
Preparation Time:- 10 to 15 minutes
Cooking Time:-10 minutes
Serves:-6

This Soup or Aamti is sure to be there in the menu of Puran Poli(Indian Stuffed Sweet Bread). There is no fun of Puran Poli(Indian Stuffed Sweet Bread) without this Aamti. This is one of the ultimate combination of Maharashtrian Cuisine i feel. In some regions of Maharashtra it has some sweet and sour taste,but my mom make it very spicy. And it really goes very well with the Sweet Puran Poli.
The water we have saved in the Puran Poli(Indian Stuffed Sweet Bread)post is used in this recipe.The masala used for making this dish can also be used in making any non vegetarian dish if you are a spice lover.
I make this combination on  the occasion of Holi. Hope you all Enjoy it. Apologies for posting this post so late. So here is the recipe
Ingredients For Paste:-
1)Medium Sized Onion 1 number
2)Red chili Powder 1 and 1/2 teaspoon
3)Garam masala 1/2 table spoon
4)Meat masala 1 table spoon
5)Turmeric Powder 2 to 3 pinches
6)Salt to taste
Ingredient For Whole Garam masala Powder:-
1)Poppy seeds 1 table spoon
2)Cumin seeds 1 tea spoon
3)Grated or Desiccated coconut 1 table spoon
4)Cloves 2 to 3 numbers
5) Cinnamon stick 1 inch
6)Black cardamom 1 number
7)Green Cardamom 1 to 2 numbers
Ingredients For seasoning:-
1)Oil 4 to 5 table spoons
2)Bay leaves 2 to 3 numbers
3)Curry leaves 1 strand
4)Extra red chili powder 1 tea spoon
Saved Ingredients:-
1)Chana Dal 2 to 3 table spoons
2)Water drained from chana dal
Directions:-
1)Dry roast all the Whole garam masala,allow it to cool,and grind to a fine powder
2)Dry roast the sliced onions until it changes its color to golden brown,allow it to cool and transfer it into a mixer grinder pot,add in all the Ingredients from Ingredients for paste except salt.Add in little bit water,and grind to a smooth paste
3)Take the dal saved from the Puran Poli ,coarsely smash it and mix with the water drained from the chana dal.(Refer the Puran Poli Post for this)
4)Heat oil in a deep pan,add in bay leaves and curry leaves fry for 1 minute or until the color changes.
5)Add in the onion paste fry for 3 to 4 minutes,add in the whole garam masala powder,mix well.
6)Pour in the dal water and if you feel its thick pour in the extra 1/2 to 1 cup plain water.
7)Add salt and extra chili powder,stir well.Allow it to boil for 4 to 5 minutes. Serve hot with Steamed Rice
or Sweet Puran Poli.

Spicy Egg Plant Bruschetta

Egg plant Bruschetta:- 
Preparation time:- 10 minutes
Cooking time:- 10 to 12 minutes
Ready In:- 15 TO 20 minutes
Serves:- 4


Hello my dear followers and visitors. My Sunday brunch last week was eggplant bruschetta with a Indian touch. Bruschetta is an Italian dish (pronounced as brus'ketta) it consists of a grilled bread rubbed with garlic and topped with olive oil,many variations can be made as per our likes.The most popular topping on it is chopped tomatoes and basil leaves. In Italy it is served as a snack or appetizer. The recipe i have prepared  also have some variations, instead of grilling the bread i toasted it for 1 and 1/2 minutes and i prepared the Eggplant topping with a Indian spicy touch.The topping i have prepared for bruschetta can be rolled in chapati/paratha and can be used as a Tiffin menu, if you want to make it for kids then just adjust the spice level.The eggplant topping is simply an idea born in my mind while watching a morning TV show Better homes and Gardens,in this show the lady used vertically sliced and barbecued eggplant,but i prepared this topping as per my taste buds and ideas and it turned out pretty well. So just give it a try and see how you find it and please leave a comment about your experiences.  My hubby liked it very much ,that's special because? he hates Brinjal still he enjoyed eating it giving a green signal for next time :). So here is the recipe.
Ingredients:-
1) Big Size Brinjal /Eggplant 1 number(Cut in cubes)
2)Chopped Tomato big size 1 number
3)Chopped Spring onions 3 to 4 numbers
4)Garlic Grated 1 tea spoon
5)Ginger grated 1 teaspoon
6)Green chilies Slit in the middle 3 to 4 numbers(Cut the slit green chili in big pieces)
7)Turmeric powder 1/4 tea spoon
8)Olive Oil 1 table spoon for Steaming Brinjal
9)Olive Oil 2 table spoons for preparing topping
10)Cumin seeds 1 tea spoon
11)Slat to taste
12)Chopped Coriander 1 table spoon.
Directions:- 
1)Heat one table spoon of oil in a deep pan/kadhai or wok ,add in the brinjal cubes,fry for 2 minutes stirring in between. After 2 minutes cover and cook the brinjal till cooked and soft or for 8 to 10 minutes ,don't forget to stir in between.
2)When the Brinjal cubes are soft and cooked mash it with the help of a masher. Small chunks are fine,do not over mash(Refer the pictures)
3)When the brinjal mash is ready keep aside.
4)Heat 2 table spoons oil in a wok/deep pan or kadhai.,add in cumin seeds,allow it to splutter
5)Add in chopped spring onions,stir for 1 minute,add in green chilies stir well
6)Add in grated garlic,stir for 30 seconds add in garlic grated,stir for 30 to 40 seconds.
7)Add in red chili powder,mix well add in turmeric mix ell
8)Add in salt,mix well. And add chopped tomatoes,stir for a minute.
9)Add in mashed eggplants or Brinjal,stir well so that the brinjal gets mixed well with all the spices
cook for 1 to 2 minutes,add in chopped fresh coriander,turn off the heat and keep aside
Ingredients For Preparing The Bruschetta:-
1)Bruschetta Bread
2)Egg plant Topping
3)Chopped Fresh Tomato 1 number
4) Sun dried Tomato
5) Feta Cheese
6)Fresh Coriander
How to Proceed:-
1)Toast the Bruschettas in a toaster for 1 and 1/2 minutes
2)Spread some eggplant topping
3)Top with sun dried tomatoes
4)With chopped fresh tomatoes
5)Top with some feta cheese,sprinkle some basil leaves
6)Garnish with coriander and serve with a glass of juice.Perfect break fast or snack or appetizer is ready.

Quick and Easy Palak Paneer

Palak Paneer(Cottage cheese and Spinach Curry) My Easy way:-
Preparation Time:- 10 minutes
Cooking time:- 10 to 15 minutes
Serves:- 4

Hello my dear visitors,here is the easy and quick Palak Paneer recipe. This is very simple and tastes really good best for surprise guest or in a rush time if u have spinach,paneer/cottage cheese and garlic in your house. This is my son's and husband's favorite recipe and mine too as it gets ready in no time. My family like it more eating with steamed rice.So here is my simple recipe.
Ingredients:-
1)Spinach blanched and pureed 2 cups
(Puree should be thick as it will become thinner when we add cream or milk at the end)
2)Cottage cheese or Paneer cubes 200 grams
2)Oil 2 table spoons
3)Cumin seeds 1 teaspoon
4)Garlic Grated 1/2 tablespoon
5)Green chilies 3 to 4 numbers (Small size)
6)Lemon juice 1/2 teaspoon
7)Garam Masala 1 teaspoon
8)Fresh cream or Milk 1/4 cup
9)Salt to taste
Directions:-
1)Heat oil in a kadhai,add in cumin seeds allow it to splutter
2)Add in Garlic grated,fry for 2 to 3 minutes add in spinach puree
(Puree the spinach along with the green chilies)cook for 2 to 3 minutes on medium heat
3)Add in lemon juice and Garam masala mix well.
4)Add in paneer pieces and salt ,mix and cook covered for 3 to 4 minutes
5)Add in fresh cream and mix well gently,cook for one minute and turn off the heat.
Garnish with fresh cream and serve with chapati or steamed rice.

VADA PAV(Bombay Burger)

Vada Pav:-
Preparation time:- 20 minutes
Cooking + Frying Time:-15 minutes
Makes:- 10 to 12 numbers of Vadas


 Vada Pav is hugely popular street food in Mumbai India.It consists of a potato vada that is potato fritter,sandwiched between two slices of a extra soft round bread roll or Pav. Potato vada or batata vada is synonymous with the South Indian Potato Bonda. Basically it is an Indian burger, last year i prepared 50 to 60 Vadas  in my sons school fate organised in purpose of raising money for school funds, i named it as BOMBAY BURGER... :). Most of you must knew about this but i am writing this for the people who don't know about it.There are many different ways of seasoning the potato mixture.This is my own style which is very Favorite among my friends.This recipe post is special for me as my son noted the ingredients and directions for me on paper, as it was a Sunday and he wanted to help me in doing my blog work, I am so proud of you my dear Sid.Very easy to make and definitely good for potlucks,snacks,and even as a party menu. So here is the recipe in my own style.
Ingredients For the Batter:-
1)Gram Flour 2 cups
2)Turmeric powder 1/4 teaspoon
3)Red chili powder 1 teaspoon
4)Garam masala 1/4 teaspoon
5)Carom seeds 1/2 teaspoon
6)Dry fenugreek leaves or kasuri methi 1/2 teaspoon
7)Ginger grated 1 tea spoon
8)Garlic grated 1 tea spoon
9)Salt to taste(I used little more than 1/2 teaspoon)
10)Water 1 cup (Add the water slowly as required refer the pictures for batter consistency)
11)Baking Soda 1/4 teaspoon
Ingredients For the Potato Mixture:-
1)Oil for frying\
2)Oil for cooking 3 table spoons
3)Cumin seeds 1 teaspoon
4)Garlic Grated 2 teaspoons
5)Ginger Grated 1 teaspoon
6)Green chili crushed 1 teaspoon
7)Dry fenugreek leaves or Kasuri methi 1 teaspoon
8)Red chili powder 1/2 teaspoon
9)Turmeric powder 1/2 teaspoon
10)Garam masala 1/4 teaspoon (Optional)
11)Salt to taste
12)Potatoes 3 to 4 numbers (Big Size. Boiled ,and cut into small pieces)
13)Lemon juice 1 teaspoon
14)Fresh Coriander chopped 1 tablespoon
Ingredients For Serving:-
1)Extra Soft Round bread rolls about 12 numbers
2)Garlic Chatni 3 to 4 table spoons (Have a look on my garlic chatni post for the Garlic Chatni recipe)
3)Sweet Tamrind Chatni  1/2 cup
Directions:-
For Making Batter:-
1)Mix all the Ingredients into the Gram flour one by one in the order as given in ingredients except Baking soda.
2)Add water slowly and mix well to form a little bit thick batter than normal Bhaji(Indian fritter) batter.Keep aside.
3)Just 2 minutes before starting to fry the vadas add the baking soda by mixing it in a 1/2 teaspoon of water.
For Making The Potato Mixture:-
1)Heat Oil in a deep pan,add in cumin seeds,allow it to splutter.
2)Add in garlic grated and ginger grated ,stir for 30 seconds
3)Add in Green chilies crushed,fry for 2 seconds,add in fenugreek leaves or kasuri methi
4)Add in red chili powder ,Turmeric powder and salt ,mix well
(If u like you can also add 1/4 teaspoon of Garam masla just for flavor,its totally optional)
5)Add in Small Chopped Potato pieces ,stir well .
6)Add in lemon juice stir well. After 5 seconds turn off the heat.
7)Finally add in chopped coriander and mix well.Allow it to cool down.
8)When cool,make medium size rounds,the size of the vada depends upon the size of the Bread rolls u get.So make the potato mixture rounds accordingly.
9)Add in the baking soda to the batter before making the potato mixture rounds.
10)Heat oil ,when the oil is hot enough,mix the batter well,deep the potato mixture rounds into the batter and slowly slide it into the hot oil. And deep fry on medium heat until golden and crisp.
(Make sure the pan for frying must be deep then only the vadas will be nice round in shape)
11)Remove the vadas on a paper napkin after done.
 How to serve:-
1)Now we have our vadas ready, bread rolls ready, Garlic chatni and tamrind chatni ready
2)Slit the bread rolls in the middle to have two equal sides.
3)Spread the tamrind chatni on both sides,sprinkle the Garlic chatni, sandwich the hot vada in between
and take a bite. Umm yumm...

Misal Pav /Spicy Sprout curry and Bread buns

Preparation time:-20 minutes
Cooking time:- 20 minutes
Serves:- 6 to 8 
Misal Pav/Spicy Curry with Bread Buns:-


Misal pav is a very famous and spicy Maharashtrian dish. Misal from Kolhapur (South west India) is very famous for its high spice contents and is known as kolhapuri Misal. Basically it is made of a sprout variety called 'Mataki'(Moth Beans) which is highly rich in protein.But the variations can be made using different sprout varieties like black eye beans, green peas, black chick peas etc. with more proportion of 'mataki'. This dish has two parts,1)Thick curry called  'usal' and 2) Spicy liquid curry called ' rassa'. In this recipe i have used only mataki Sprouts,but as mentioned above u can use mixed sprouts.When i was making this i Fergot to take photos of making Usal,then again i made little amount from the kept aside sprouts,so the quantity in photos during making Usal part is seen less..:).This is a best dish for potlucks or even as a party menu as it is very feeling. This is all time favorite dish for people in Maharashtra.So here is the recipe.
Ingredients:-
1)Sprouted and boiled moth beans (mataki) 2 cups (Cook the sprouted mataki (Moth beans) in a pressure cooker, until 1 whistles or until cooked)
2)Finely chopped onions 1 number (large size)
3)Chopped tomato 1 number (Medium size)
4)Tomato paste 1 and 1/2 table spoons
5)Finely grated Ginger 1 teaspoon
6)Finely grated Garlic 1 teaspoon
7)Oil 8 tablespoons
8)Cumin seeds
9)Red chili powder 3 teaspoons
10)Coriander powder 2 teaspoons
11)Garam masala 1/2 teaspoon
12)Turmeric powder 1/4 teaspoon
14)Salt to taste
For Topping:-
1)Spicy Mixture or Farsan(Indian snack) 1 to 2 cups
2)Finely chopped onion 1 number (Medium size)
3)Yogurt
4)Chopped coriander
Directions For preapring Rassa/Spicy liquid curry:-
1)Heat 5 table spoons of oil in a deep pan or kadhai
2)Add in cumin seeds,allow it to sputter
3)Add in 1/2 tea spoon garlic grated or paste,stir for a second
4)Add in 1/2 tea spoon Ginger grated or paste stir it for one to two seconds
5)Add in 1/2 of the chopped onions and fry till golden brown
6)Add in 2 tea spoons of red chili powder and stir well.
7)Add in chopped tomatoes,cook for 2 to 3 minutes.
8)Add in tomato paste,allow it to cook till oil starts to separate or till the raw smell of
tomatoes disappear.
9)Add in garam masala and turmeric powder mix well.
10)Add in coriander powder and mix well.
11)Add in 1/2 cup of coarsely smashed,boiled mataki,mix well and allow to cook for 3 minutes.
12)Pour in 2 cups of water preferably drained from boiled mataki and boil it for 3 to 4 minutes
on medium heat.
Directions For Usal:-
1)Heat 3 table spoons of oil in a deep pan or kadhai,fry remaining half of the onions,1/2 tea spoon ginger
1/2 tea spoon garlic till golden brown.
2)Add in 1 tea spoon of red chili powder,1 tea spoon of coriander powder and mix well
13)Add in the remaining boiled mataki ,add in salt and cook for 3 to 4 minutes.
14)After that transfer it in to a serving bowl.
How to proceed:-
Now we have everything ready to serve(Refer the picture),follow the following steps
1)In a bowl first serve Usal about 2 to 3 table spoons
2)Second,pour Rassa,enough to cover the Usal (Refer the pictures)
3) Third Add in the Farsan/Spicy mixture
4)Fourth add in yogurt about 1/2 to 1 table spoon
5)Fifth add in pnion about 1 to 2 teaspoons.
6)Sixth Some coriander
7)And finally serve with the fresh and soft pav or round bread rolls.
(I like 1/2 teaspoon sugar in it,mix everything and enjoy the spicy and tasty MISALPAV)

Baked Mexican Rice with cheese pattise

Baked Mexican Rice with cheese patties:-

This is a really very yummy rice,i suggest everybody must try.Making of this dish required lots of efforts but the end product will take away all the pain. This is an yummy vegetable rice,topped with cheese patties,covered with yummy tomato gravy, topped with cheese and baked in a hot oven.It is a wonderful novelty dish though it needs lots of efforts.The only thing i have experienced while preparing this is,the amount given in the original recipe is very less i feel,so i increased the amount of some ingredients.Basically this is a Tarla Dalal's recipe but i did some variations as per my convenience and made it from the available ingredients at that time in my home. . My son really liked it and was asking me, "mamma,why don't you put this recipe on your blog?,this is really yummy! ".So here is the recipe.
Ingredients:-
For The Rice:-
1)Cooked Rice 4 and 1/2 cups(Cooking method of rice is same as i have explained in my Vegetable Biryani recipe)
2)Lengthwise chopped onion 1 number(Bigger size)
3)Red Chili Powder 2 and 1/2 teaspoons
4)Boiled Mixed vegetables 2 cups(you can use vegetables as per your choice.I have used cauliflower, broccoli,carrots,french beans,i suggest adding mexi beans or rajma if you want for a proper mexican touch)
5)Green Capsicum 1 number(Medium size and optional)
6)Oil 3 to 4 tablespoons
7)Garlic grated 1/2 tablespoon
8)Ginger Grated 1/2 tablespoon
For the Cheese Patties:-
1)Potatoes boiled and mashed 2 and 1/2 numbers (Medium size)
2)Crumbled paneer 1/2 cup
3)Plain flour 2 tablespoons
3)Chopped coriander 2 tablespoons
4)Crushed green chillies 3 to 4 numbers
5)Oil for cooking 2  tablespoons
6)Salt to taste
For the Gravy:-
1)Chopped Tomatoes 5 numbers(Medium size)
2)Tomato puree 2 tablespoons(I used ready made tomato puree)
3)Chopped onion 1 number(Medium size)
4)Red chili powder 1 and 1/2 teaspoon
5)Garlic grated 1 teaspoon
6)Sugar 1/2 teaspoon
7)Oil 2 tablespoons
8)Pinch of carom seeds or Oregano
9)Salt to taste
For baking:-
Grated Mozzarella cheese 6 tablespoons or as much as you want
Method:-
1)For The Rice:-
1)Heat oil in a deep pan or wok,fry onions for 2 minutes
2)Add ginger and garlic grated or paste ,add green capsicum,fry for another 2 to 3 minutes
3)Add in red chili powder and boiled vegetables and fry for 2 to 3 ,minutes
(Boil the vegetables in salted water and do not over boil them,the vegetables should be cooked and firm,so won't get break when mixing with the rice.)
4)Add rice and salt mix thoroughly.
2)For The Cheese Patties:-
1)Mix potatoes,paneer,coriander,plain flour, green chilies and salt mix well.take some mixture and shape into patties.Repeat for rest of the mixture.(While adding the flour ,check for the consistency of the mixture and adjust accordingly,so that the patties won't get break.To know the correct amount of flour,test by shallow frying a small patty. )
2)Shallow fry or cook on a hot tava,griddle or pan, using little bit oil.(Like how we shallow fry normal patties)
3)For The Tomato Gravy:-
1)Heat oil in a wok,fry the onions for 2 to 3 minutes,add in garlic grated,fry again for 1 minute.
2)Add the tomatoes,fry for 2 minutes, add in tomato puree,fry for 2 minutes ,add in carom seeds or oregano,chili powder,sugar,salt and add 1/4 cup water,mix well and cook till the tomatoes becomes soft.
3)When the tomatoes are ready turn off the heat,allow it to cool down and blend in a blender to a smooth gravy,if its too thick add little bit water again.
4)The final step now:-
1)Preheat the oven at 180 ° celsius,grease a baking dish or tray with oil or butter,spread the above cooked hot rice.
2)Arrange the shallow fried patties on top of the rice ,pour the tomato gravy on it,sprinkle the grated cheese on top and bake at 180° celsius for 10 to 15 minutes
3)Serve hot with burritos or cheesy nachos topped with spicy salsa sauce.

Rajasthani Gatte

Rajasthani Gatta Curry:-


Rajasthani Gatta curry is a besan logs in a yogurt gravy, fevourite amongst all in Rajasthan and also mostly all over India,and my husband likes it too.. the new and relief thing to my notice is that my son also started liking it..and thats gave me the enthu for making this Rajasthani gatte. This is my moms recipe.
The recipe is so simple and yummy.

Preparation time:- 20 minutes
Cooking time :- 30 minutes
Ingredients For Gatte:-
1) Gram Flour/Chickpea Flour/Besan 1 cup
2) Red chili powder 1/2 tea spoon
3) Garam Masala 1/2 tea spoon
4) Turmeric powder 1/4 tea spoon
5) Ginger paste 1/2 tea spoon
6) Garlic paste 1/2 tea spoon
7) Green chilies minced 1/2 tea spoon
8) Ghee(Clarified butter) 1 table spoon
9) Yogurt 1/4 cup
10) Water 4 cups
11) Oil 1 table spoon

Ingredients For the Gravy:-
1) Oil 4 table spoons
2) Cumin seeds 1/2 tea spoon
3) Medium Size Tomato pureed 2 numbers
4) Yogurt 1 cup
5) Red chili powder 1/2 tea spoon
6) Turmeric  powder 1/4 tea spoon
7) Garam masala 1/2 tea spoon
8) Coriander powder 1 and 1/2 tea spoons
9) Green chilies minced 1/2 tea spoon
10) Garlic finely grated 1/2 tea spoon
11) Ginger finely grated 1/2 tea spoon
12) Coriander leaves strands few numbers

 Method For Gattas:-
1) In a mixing bowl add gram flour,red chili powder,garam masala,turmeric powder ,salt and mix well
2) Add in Ghee(clarified butter) Mix thoroughly.
3) Add ginger ,garlic paste,minced green chilies and yogurt.
4)Knead to a stiff dough ( During kneading coat your hands with oil/ghee ,as the dough will be sticky)
5) In a deep vessel add the 4 cups of water,and 1 table spoon Oil and bring it to boil.
6) Lightly apply some oils on to your hands ,divide the dough into approximately 3 portions .
7) And roll each ball First in between your hands and later on the wooden chopping board into cylinder shape logs.
8) Drop slowly each log in to the hot boiling water,cover and cook for 15 minutes by stirring in between and after 5 minutes at the beginning.(Cylinders will float up when they are done cooking)
9) Once the logs are ready,remove them from water.(Do not through the water,later we are going to use it in the preparation of gravy.) and allow the logs to cool.
10) After the logs are cooled down, slice them in to 1 and 1/2 inch circles.

Method For Gravy:-
1) In a pan/ Kadhai heat 4 table spoons of oil/ghee,add in cumin seeds,allow them to sizzle
2) Add in ginger paste, garlic paste and minced green chilies, stir for 3 seconds
3) Add in Tomato puree,cook till oil starts to separate and the raw smell of tomatoes disappear.
4) Add red chili powder,turmeric powder,coriander powder,garam masala and mix well.
5)  Add the gattas,mix well and cook for 4 minutes, meanwhile beat the yogurt in a smooth texture.
6) Switch off the heat and slowly pour in the yogurt stirring continuously .( So that gravy wont get curdle)
7) Turn on the heat on medium and add  2 cups of the reserved water from the boiled gattas.
8)  cook for 5to10 minutes
9) Garnish with coriander leaves and serve with chapati  or rice. Enjoy.
